One of my favorite things to make is a salad, not only are they healthy, delicious and so fast to make. This one is one of my favorites, I’ve had it for lunch and dinner as well. You can have it with protein or no protein. I sometimes like to have it with a veggie patty, the opportunities are endless.
Add as much or little of each listed above-depending on how hungry you are and if you want leftovers the for next day.
Everyone into the pan! I only sauté the mushrooms, bell pepper and potatoes. Once they are done I toss some in my salad and save the rest for tomorrow.
These are the 3 spices that I like to add, obviously add whatever you desire =)
I cook the potatoes in the microwave for about 8 minutes before I add them into the pan, this way they cook much faster. I sauté everything for about 8-12 minutes.
Once you have everything cooked mix everything together, and voila! I drizzle a little bit of some ranch and devour this whole thing! I also mixed in a chopped up veggie patty, but feel free to use whichever protein you are craving.
